Ricotta pie Recipe

A couple have people have asked for it, so here it is!


For the crust;

2 1/2 cups of flour

8 TBS butter softened

3/4 cup sugar

2 egg yolks

grated zest on 1 lemon


For the filling;

1 pd ricotta

2 eggs

1/2 cup sugar

2 TBS raisins

1 tsp cinnamon

grated zest of 1 orange


Combined the crust ingredients.  Work the dough vigorously, cover than set in a cool place for 30 minutes.


Preheat the oven to 375*.  Mix filling ingredients.  Divide the dough into two pieces, roll out and use one piece to line pie tin.  Fill the pan and use the remaining dough for top.  Bake 40 minutes.
